This is a zero waste recipe which I make (especially on rainy Sundays, which we have quite often here in The Netherlands) : banana bread ! The only waste is the paper package where the banana bread mix is bought and is recyclable. The egg shells and banana peel is 100% compostable.
You will need:
5 ripe bananas
110 ml sunflower oil
One package banana bread mix (from Dille & Kamille)
- Put the 5 bananas in the oven on 160 degrees for 30 minutes.
- Peel the bananas and put them in a bowl. Add the eggs and the sunflower oil and mix it all together.
- Put little by little the banana bread mix in the bowl and mix it gently with a whisk. Pour the smooth batter into a narrow baking form and put it the oven for 60 minutes on 160 degrees.
- When finished let it cool down and enjoy the banana bread with whipped cream or vanilla ice-cream.
Tip: in order to keep your banana bread fresh store it in a beeswax wrap, therefore you won’t need plastic foils any more.
